He is one of six children and remembers dinners of big sharing plates, ‘a delicious pot dumped in the middle of the table that we all helped ourselves from – and lots of talking.’ Long before understanding the provenance of food became a fashionable concept, Quinn knew exactly where his food came from. ‘Hunting was part and parcel of my background – my dad was a very good falconer and we had gun dogs. And foraging was important too.’ He started cooking in a local pub at the age of 14 and continued through school and college holidays. ‘It was French-style cooking with lots of sauces and it taught me a lot.’
